Nussecken

Nussecken or German nut corners are a delicious , classic German pastry and will dress up any afternoon tea.

These nut corners make a delicious afternoon tea snack and are ideal for every time.

Nussecken (German nut bars )Recipe :

Ingredients:

For the pastry ;

  • 200 g plain flour
  • 1 pinch salt
  • 60 g finely ground nuts (hazelnuts or walnuts)
  • 70 g caster sugar
  • 1 egg
  • 125 g butter
  • 2 teaspoons vanilla sugar
  • For the topping:
  • 150 g butter
  • 100 g caster sugar
  • 3 Tablespoons honey
  • 250 g chopped nuts (hazelnuts or walnuts)
  • 2 teaspoons vanilla sugar
  • 3 Tablespoons single cream

Directions:

Make the pastry :

In a bowl mix flour , salt ,nuts ,sugar ,egg ,butter ,and vanilla sugar till it holds together in a ball .

Make the filling :

Melt butter in a small saucepan. Add sugar and honey and stir till dissolved. Remove from the hob ,add chopped nuts and vanilla sugar and stir well till combined .

Preheat oven to 175°C . Line & baking tray with grease proof paper .

Roll out pastry to a rectangle about 1 cm thick . Place on baking tray . Brush with cream and evenly spread with nut topping.

Bake in the preheated oven till golden brown ,about 20 minutes.

Let fully cool on baking tray before cutting into evenly sized triangles.

Melt chocolate and dip corners of the triangles in chocolate. Let chocolate harden and store in airtight .

Ingredients:

For the cake pops :

  • 500 g baked cake (e.g vanilla or nut)
  • 50-100 g cream cheese
  • for the decorating :
  • 150-200 g white chocolate or candy melts
  • 50-100 g semi-sweet chocolate,melted
  • Coconut oil (optional)
  • 60 g mixed nuts (almonds , walnuts,pecans ,hazelnuts), chopped and roasted
  • Cake pop sticks

Directions:

Bakecake ,vanilla with nut and let’s cool down completely or use it ones you already have at home . Add alarge bowl and rub it between to your hands for getting fine crumbles (you can use food processor for that ) . Add a small amount of cream cheese and mix until you get a moist and sticky mix (add more if the mix is not holding well together) set aside .

Melt it with white chocolate with candy melts in the small bowl over simmering water. You don’t have to melt all at once . You need just a small amount right now . and Make sure it with no water can get in the bowl or you will the end up with ones ugly mess. Once the chocolate is melted ,take it from the heat and set aside .

Form small triangles with the cake pop dough . Dip the cake pop sticks into the melted chocolate and stick them into the triangles on one of the shorter side -be careful not to break the cake pop . Place it on a baking parchment & a baking mat and let cool in the fridge for 1 hour.

While the cake-pops with cooling , chop and nuts in place it in a small-bowl on a small-plate . Melt the remaining chocolate- white and dark . If the chocolate is too thick, add some coconut oil to get it more runny . Take the cakes and pops out of the fridge and dip it into white-chocolate – be careful with not to break them or also let them slip into thechocolate. Place on a cake pop stand and let dry just a bit . The surface should not’be dry , just not drip anymore. Dip it in the chopped nuts so everything will be covered . Place on the stand to let dry completely. As soon as the chocolate is dry and the nuts stick well ,dip one corner of the triangle in the melted dark chocolate. Let dry again .
